My version of Ropa Vieja (Cuban style)

Day 1

Season meat and let it marinate - cumin, s & p, oregano

Braise it - onions, carrots, celery, garlic, cumin, etc.

After 1 hour

After 2 hours

After 3 hours

Then you "sift, mash, drain, and reduce."

Day 2

Throw in the veggies and saute

Shred and pile on the meat, tomatoes, garlic, etc.

Simmer for another 30 minutes

Day 3

Simmer for 20 minutes and serve with black beans, rice, and maduros!
